Model 138/27/VP turbofilm cooker with a 2 zone plate heat exchanger comprises two cooking systems in parallel with dissolver, cooker, condenser, evaporating and vacuum film evaporator system for doing pectin jellies or alternately and Jet cooker for starch, gelatine and starch/gelatine jellies. High final solids starch, gelatine and starch/gelatine jellies can also be processed through the Plate heat exchanger provided a Vacuum flash is fittedon. Film thickness is less then 1 mm and 10 secornd or less cooking time.
