USDA approved dicer speeds vary depending on type of product used. Unit is capable of slicing 8000 Lbs/Hr of Pineapple at high speeds and 5000 Lbs/Hr of Macadamia nuts at high intermediate speeds. Unit will cut pieces as small as 1/16" X 1/8" X 1/16" and as large as 3/8" X 1/2" X 3/4". To cut different size pieces change parts are needed. Last running Mozzarella cheese in cubes.
