Stephan, model UM 12, 12 liter, 304 stainless steel half low pressure jacketed, bowl slicer. Temperature range: up to 203° F. Equipped with 12½" diameter x 7¼" deep mixing bowl, clamp down plastic cover with hand crank side scraper agitation, (2) stainless steel 3" long x 2" wide bottom chopper blades powered by a two speed 2 / 2½ hp 1800 / 3600 rpm base enclosed drive, removable bowl, 1½ gallon cold trap and V-VGD 10 vacuum pump.
