Commercial cutter and slicer equipment is designed to cut, slice, dice, chop, process, peel, and strip cut various different products such as cheeses, meat, vegetables, fruits, breads, pastes. Cutter and slicer equipment covers a number of different types of machines that can be used in the size reduction of a variety of food products. The proper cutter and slicer for the application is based on the product that is to be cut, sliced, or processed, the type of cut, slice, or process needed for the application, and the volume of product that needs to be processed in a given amount of time. Commercial utter and slicer equipment utilize a variety of rotating, spinning, cross-cuting, shredding, and other types of blades and knives to properly process the product.

Gemac Model 2501 Hydraflaker, stainless steel, frozen block breaker rated from 1 to 3 blocks per minute – depending on materials and application. Block sizes up to 24" in Length: 24" in width; 10" in Height, down to 0 Deg F and can reduce product down to 1/4" thick in 18 to 30 seconds and 1/32" thick in 2 minutes plus (depending on product). Equipped with 30" wide x 69" long product feed table with 22" wide x 6-1/2" high hydraulic product ram to 28" long x 12" OD (8) blade rotary drum cutting assembly has flip up safety cover with interlock shut-off and 30" wide discharge chute with 28" floor clearence. Equipped with 20" diameter cutting wheel, 96" long V-belt infeed with a 48" long load area and variable speed controls for both the belt and wheel. Ideally suited for elongated firm products to 4" diameter and 6" diameter for compressible leafy products. Mounted on stainless steel (4) leg base frame with casters. All S/S dicer uniformly dices, strip cuts, and slices a wide variety of products at high production capacities, and accepts products up to 10" in any dimension. Types of cuts slices: flat & crinkle slices: 1/16 to 1" Strip cuts: flat and crinkle minimum/maximum flat strips 1/8 x 1/8" to 1 x 1" x length of product. Crinkle strips 9/32 x 9/32" length of product. USDA approved dicer speeds vary depending on type of product used. Unit is capable of slicing 8000 Lbs/Hr of Pineapple at high speeds and 5000 Lbs/Hr of Macadamia nuts at high intermediate speeds. Unit will cut pieces as small as 1/16" X 1/8" X 1/16" and as large as 3/8" X 1/2" X 3/4". To cut different size pieces change parts are needed. Last running Mozzarella cheese in cubes. Unit is all stainless steel USDA approved. Change parts required to accommodate size range.
